Nicolas Oliveira has a diverse work experience in the hospitality industry. Nicolas is currently the Director of Operations at HABITAS, a position they have held since May 2022. Prior to that, they worked as the Assistant General Manager at Jean Georges' Spice Market from January 2010 to January 2013. Nicolas has also held positions as a General Manager at TRE Italian Bisto + La Loggia Restaurant & Lounge (TLG Hospitality) from October 2007 to January 2010 and at Via Della Pace + BOOM Restaurant (Pane & Vino Group) from July 2004 to July 2006.

Nicolas Oliveira began their education in 2000 at the New World School of the Arts, where they earned their High School Diploma in 2004. After completing their secondary education, they enrolled at Hunter College from 2004 to 2007, where they pursued a degree in Economics/Finance. In 2006, they attended the International Culinary Center and obtained a Classic Culinary Degree specializing in Italian Culinary Arts. Seeking further expertise in Italian cuisine, Nicolas joined the ALMA Italian Culinary Graduate Program in 2007 for a year and completed their Master's in Italian Culinary Cuisine in 2008.
