How to Make McDonald's Big Mac Sauce at Home, According to an Ex McDonald's Chef

Mike Haracz isn't here to gatekeep. As a former corporate chef at McDonald's, Haracz knows a lot of tasty secrets. And he's sharing them all on TikTok — including spilling the secrets to the Big Mac Sauce recipe. 

"Today, I am going to give you my recipe on how to make Big Mac Sauce at home," Haracz shared in his latest 60-second TikTok. 

According to Haracz, it all begins with one cup of mayonnaise. He specifically said he uses Hellmann's but that you can "use what you want" for your Big Mac Sauce. 

Next, he adds a quarter cup of sweet pickle relish, followed by two tablespoons of Dusseldorf Mustard and one teaspoon of white wine vinegar. Then comes the spices. Haracz adds one and one-fourth teaspoon of paprika, one teaspoon of onion powder, one teaspoon of granulated garlic, and one-eighth a teaspoon of white pepper.   

"All you gotta do is mix it all together," he says. "As you can see, there is no ketchup in this recipe. The color you get from Big Mac sauce is just from paprika." 

Finally, Haracz says you should let the sauce sit for about 30 minutes before you try it. "This is as close as you are going to get," he adds. 

But you don't just have to take his word for it. "just tried your recipe … it definitely tastes like the Mac Sauce! Thank you," one follower noted. "O, so I didn’t have that kind of mustard, so I did one tablespoon of each Dijon and French’s," another added. "Turned out perfect!!! Thank you! Tastes exactly like it." 

This isn't the first time Harcaz has gone viral for sharing his insider knowledge about McDonald's. In 2023, he also took to TikTok to share his take on the worst time to visit your local shop. According to Harcaz, the worst time to go is around 10:30 a.m., as this is when McDonald’s restaurants usually switch over from breakfast to lunch menus, making it rather difficult to order either a late breakfast McMuffin or an early lunch Big Mac. But, now that you at least know how to make the sauce, you can always try to make a 10 a.m. Big Mac at home.
