rom the moment she decided to go into the hotel business angelina Garcia knew that she wanted to become a concierge; she has attained that goal. she started as a concierge in 1999 at the Hotel Finisterra in cabo san lucas and attended her first meeting in that capacity, leading her to decide that the hotel business would be the path for her future. in 2000, she attended her first national congress in Puerto Vallarta where she met concierges from many parts of Mexico, as well as from all over the world.
“after that congress,” she explains, “i was invited to work at the sheraton Hacienda del Mar Golf & spa Resort los cabos and continued my career by attending more congresses.” To name a few, these were held in las Vegas, biarritz, France, Vienna and acapulco. Two years later she became a chief concierge and, in 2005, became a clefs d’or member, identified by the organization’s symbol of crossed gold keys worn on the lapel.
as a chief concierge, Garcia opened the first The st. Regis in latin america, located in Punta Mita, nayarit, leaving her with many wonderful memories. in 2011, she returned to los cabos, which she considers her home, to begin a new position as a Guest Relations Manager and concierge. This year she was elected to the position of concierge director of baja california state for the 2013-to-2015 period.
born in Mazatlan, sinaloa, she studied bilingual secretary at institute Windsor. after working as an Executive Manager in a timeshare, she expanded her knowledge of the service industry by spending a year california, then returning home to work at various hotels and resorts, until finally re-joining the sheraton Hacienda del Mar.
as a concierge, Garcia is passionate about her high profile job and all that it entails. “i love to promote the beauty of my country to all our guests – i love seeing them return to their homes with a satisfaction and fulfillment of a fantastic trip to Mexico,” concluded angelina.

orld famous Latin artist, Alejandro Sanz, writes and composes all of his songs. The internationally renowned Latin Grammy winner is not only one of the most successful Spanish singers of all time, but is widely recognized as a global philanthropist and for his dedication to improving access to education for children – and he LOVES Mexico!
BajaTraveler® was honored to interview him and here’s what he had to say on his first visit to Mexico.
“It was back in 1992 when I first visited Mexico for my Viviendo Deprisa tour. I will never forget the love with which I was received by all – the fans, the press, the crew I got to work with.
“I fell in love with the country, its corners, its people – their sense of humor.”
I made friends back then with whom I’m still close friends.” We asked him if he had a favorite dish from Mexico and here’s what he had to say...
“I also adore Mexico’s gastronomy, and if I had to select a favorite one, I’d say… tacos al pastor, or cochinita pibil, or birria, or tortas ahogadas, or carne seca, or enchiladas, the arrachera…” it’d be hard to pick one.
Born in Madrid, Spain, on December 18, 1968, he was the youngest son of Maria Pizarro and Jesús Sánchez. At age seven, inspired by his father who played the guitar professionally,
he learned to play the instrument, too. Being exposed to traditional flamenco music, he originally aspired to becoming a flamenco performer, but finally decided to focus on creating popular music with a flamenco flair. At age 20 he was young and courageous and, at 23, walked with great confidence onto Spanish and foreign stages.
“I am a common man with a common name,” he jests. “The first time I arrived at a music company, I was told that ‘Sanchez’ was very long and very common, so they removed the ‘che’ from the middle!”
Since that day, Alejandro has received a numerous amount of Latin Grammys and Grammys, his latest album, La Musica No Se Toca, was released on September 25, 2012. This album has shaken up the scene with stunning sales figures, which comes as a welcome surprise considering record launches in recent years. Sanz’s new record has been certified nationally and internationally as the biggest-selling Spanish language album of 2012.
In 2013 Alejandro has certainly surpassed last years’ awards, he was honored with the Doctor Honoris Cause by the University of Berklee, Artist of the Year by Premio Oye, Best Pop Record by the Latin Grammy® and being in our BajaTraveler® cover and now on this guide. BT

For centuries poets have extolled the virtues of The Grape. The exact origin of wine is imprecise, but Ancient Georgia is thought to have set the foundation for winemaking in the modern world. Archaeological sites there showed remnants of 6500-year-old grape, which denotes the beginning of wine production in Europe. From Georgia it is believed to have gone to Phoenicia, Egypt and the Romans who in turn introduced it to what is now France, Spain and Great Britain.

Wine formed an important dietary element for the Roman Empire and, after its downfall, wine-making continued through the Church. In the Near East, domesticated grapes were abundant around early 3000 BC. Considered important to ceremonies in ancient Egypt, the winemaking industry flourished in the Nile Valley after grape cultivation was introduced.
History indicates that it was the Romans who introduced their wineries to the Iberian Peninsula. The Spanish conquistadores brought the first taste of wine to Latin America to fulfill the requirements of Catholic Holy Eucharist; their love of wine eventually making viniculture a vital enterprise. Not previously considered of great quality, American-produced wines were regarded as inferior to their European counterparts until the late twentieth century.
In 1926, Don Angelo Cetto Carli, an Italian immigrant, arrived in Baja California, bringing with him his knowledge and expertise, developing
wines of magnificent quality from the strong stock of vines from Europe. Presently his son, Don Luis Agustin Cetto, and grandson, Luis Alberto Cetto Salazar have taken the family company to new heights in wine production and world-wide distribution. His estate-bottled wines have earned more than 349 awards, mostly in Europe.
“My oenologist, Engineer Camillo Magoni, who came to us some forty years ago from Milan, Italy, has the knowledge of how to combine art and efficiency in the selection of vineyards and how to expand the market,” says Don Cetto.

Every august, since the 1990s, the association of Winemakers of baja california has held the Grape Harvest Fiestas in the Valle de Guadalupe. These week-long celebrations are amazing; most of the wineries go all-out with these festivities by inviting many famous singers and celebrities. The revelry includes wine-tasting sessions, concerts

The varieties of red wine produced in the baja california region consist of cabernet sauvignon, Ruby cabernet, zinfandel, Grenache and Mission. The whites include chenin blanc, Palomino, Reisling, sauvignon blanc, sedmillion, saint Emilion and Malaga.
Today, Valle de Guadalupe boasts not only the well-known wineries, but also scores of artisanal wineries. The wine is excellent and has become trendy enough to be served in fashionable restaurants throughout Mexico. Top chefs are opening eateries in the area, and several stylish boutique hotels have been built within the past few years... with more in the making. Which leads us to a relative newcomer to the Valle de Guadalupe magic, daniel sanchez, who moved there with his family and started a winery in the Ruta del Vino in 2008. They also built a resort, the Hotel Hacienda Guadalupe, and a restaurant where the house wines are popular with locals and tourists alike.
There are so many wonderful things to see and do in the Valle de Guadalupe. anthony bourdain, host of the popular Travel channel series “no Reservations,” traveled around the Valley and found it awesome there.

named director of the Vine and Wine Museum in 2012, for two years Gabriel díaz Garcia de león, has been involved in the Project Museo del Vino. located in the heart of the sun-drenched Valle de Guadalupe, the museum is a travelers’ dream destination.
Gabriel díaz has brought with him a diverse background that includes a degree in business administration – in addition to other degrees – which has enabled him to work in the Public, state, Federal, Municipal and Private sectors. For fifteen years he was the administration director for Telefonos del noroeste. He loves art in all forms and collects pieces, some of which are unique in Mexico.
currently, díaz is the president of the codET foundation for the prevention of blindness. He is also a member of the cofradia del noble Vino de Tijuana as a Maestre canciller. When he finds the time in his busy schedule he also enjoys music and reading.
“For me, Mexico is a beautiful country,” he says. “Whatever your interest, there is much to do and appreciate. There are hundreds of museums, historic buildings, archeological ruins, and beaches such as those of the caribbean.” He enjoys exploring different areas including the Ruta de las Misiones from loreto to la Mision de Guadalupe, the sea of cortés and the Gulf of california.

The story of winemaker, Edgar nieto, began when he was working at Plantation House in cancun. later, his curiosity and passion for wine blossomed when, in 2008, while working at one&only Palmilla, he met Hugo d’acosta, known as “The Mexican Mondavi,” owner of four wineries in the Guadalupe Valley.
deciding to take a break from his job, nieto took a trip to Ensenada. in a visit to la Escuelita del Porvenir he learned the whole process of making wine. Then, after watching the movie “a Walk in the clouds,” he knew he wanted to make his own wine.
“My wines are very aromatic, fruity, of medium intensity, complex, silky,” he explains. “They are made out of zinfandel, Grenache, nebbiolo and Petite syrah. The reason i chose these grapes is, in my opinion, they are the best grapes you will find in Valle de Guadalupe. i don’t really like to compare them to others; to me, my wines are made with my own hands – with passion and love for wine.”
nieto enjoys the entire process, from picking the grapes, the selection, grinding them using his own strength to press, putting it in barrels and then bottling the result. also, knowing every bottle has gone through his own hands and being certain of what is inside makes him proud.
“i’m sure i may not be any different than many others,” he admits, “but we get a very beautiful fruit from the earth and the best things are made by hand.” at present, it is a very limited production – about 2,600 bottles in five different labels. He hopes to grow and achieve up to 5,000 for label.
born and raised in Merida, Yucatan, he is thankful for the strong support of his mother and also his wife, Monica, “that one person who will make us complete,” he says. His daughter, sofia, is too young to understand yet, but “all of this is also for her and to build something she can be proud of.”

it was inevitable that chef Gabriela Melchum would return to her native Ensenada to fulfill her passion for cooking when, in 2008, she opened Hotel Hacienda Guadalupe with a small kitchen, offering food only for hotel guests. Two years later she broadened her horizons with Restaurante Hacienda Guadalupe, which is open to the public.
in this new space, chef Gabriela takes over her kitchen to guide a group of cooks, most of them graduates of the school of Enology and Gastronomy at the university (uabc) in Ensenada. Here, she offers a sustainable regional style fare with a Mediterranean touch. Most of the fresh ingredients are grown locally, always supporting the small and medium producers in the Valle de Guadalupe and the region. she was fulfilling a dream long nurtured while she lived in california, where she and her family owned a gift store.
in 1989 she had moved to orange county and, during holiday trips to Ensenada, the idea was born to create a new Project in the Ruta del Vino (the Wine Route). during that time, Gabriela discovered her passion for cooking and wine. deciding to prepare for a new lifestyle, she enrolled in orange county culinary art institute, where she perfected her cooking expertise.
To learn about business administration in the hotel and restaurant industry, she also enrolled in orange coast college. by 2008 the construction for their development finalized and, together with her husband and daughters carolina and Paulina, they returned to Ensenada to begin the new adventure in Hotel Hacienda Guadalupe – and a winery in the Ruta del Vino in the Valle de Guadalupe.
Throughout the years, Hacienda Guadalupe has been among the top restaurants in the region, participating in prestigious events – and boasts one of the most complete cellars of Mexican wine, including their own Melchum label.

Tijuana, the largest city on the Baja California Peninsula, with a population of approximately 1.3 million, is the world’s most visited border city. It’s a dynamic and growing urban center that has close socio-economic ties to the U.S., especially to San Diego, its immediate neighbor to the north. The city is a bastion of culture and commerce, and is currently witnessing a revival in arts and tourism. Be sure to check out the Tijuana Cultural Center and the numerous independent art galleries while you’re there. Shopping in Tijuana is notable, and the city is also the epicenter of the relatively new Bajamed cuisine – a fusion of Mexican food with Mediterranean and Asian influences that relies heavily on locally sourced vegetables, cheeses and sea foods –typically paired with Bajaproduced beer and wine.

Tijuana has many five-star restaurants, and the variety of food choices in the city is astounding. You’ll find everything from the most modern-fusion cuisine to modest but unbelievingly delicious street tacos. To many people’s surprise, the Caesar salad was created in Tijuana, so don’t be surprised to see it on many menus.

Night Life
Tijuana is renowned for its nightlife, with many discos and nightclubs to choose from. You’ll find late-night dancing and clubbing in the Zona Río and Plaza Fiesta regions, whereas Calle 6 (Calle Sexta) is home to numerous hip bars and restaurants. You’ll also find karaoke and sports bars throughout the city as well as wine bars that feature the excellent local varietals of Baja California.
Activities
Tijuana offers spectator sporting opportunities that you’ll not find in many other cities. You can watch live greyhound racing at the Hipódromo Caliente, or traditional bull fights at the Toreo de Playas de Tijuana (Bullring by the Sea). In addition, the Jai Alai Fronton Palace, which housed live Jai Alai (Basque ball) for many decades, and which is now a cultural events forum, provides striking architecture and the possibility of viewing the old courts.
Culture
Tijuana has myriad cultural activities from which to choose. The most well known spot for art, and a perfect place to start, is at the Tijuana Cultural Center (CECUT) – the only institution of the National Council for Culture and the Arts outside of Mexico City. CECUT has in fact become the primary symbol of the city of Tijuana. It hosts fine arts, literature, music, dance, theater, folk, and visual arts exhibits and festivals, and has an Omnimax theater and planetarium. The Museo de las Californias and the Cubo Gallery, both housed inside, are not to be missed.

Just on the west of the city you’ll find Playas de Tijuana – the Beaches of Tijuana... Here is where you’ll find the only Bullring the city has left (the original one in downtown Tijuana was demolished several years ago). Here is also the beginning of the TOLL Road which goes all the way to Ensenada.
Shopping
Tijuana is a shopper’s mecca, with offerings ranging from handmade Mexican folk art to designer clothing housed in modern, high-end department stores. Worth checking out are Plaza Río Tijuana and Pueblo Amigo. Mercado el Popo and Mercado Municipal are two worthwhile stops for enjoying Mexican popular culture.

Rosarito, located just 30 miles south of San Diego, is the perfect place for R&R. From slow, delicious world-renown
“Puerto Nuevo style” lobster dinners, to miles of sandy Pacific-front beach on which to lounge to its numerous wellness spas, Rosarito is a place for relaxation. But don’t worry, there are plenty of opportunities for recreation as well. Night Life
Rosarito has a robust nightlife. There are numerous restaurants and bars, ranging from elegant and quiet, to karaoke bars to those with beach volleyball or even mechanical bulls. Papas & Beer is a Rosarito institution, with 50,000 sq ft of sand it’s the largest beach club on the West Coast. Festival Plaza hosts concerts throughout the year that draw large crowds.
Activities
Rosarito hosts many annual events, the most popular being the Rosarito-to-Ensenada bike ride, a 50-mile route primarily hugging the stunning Pacific coast. In fact, it’s so popular there are now two per year. Other possibilities include the International Mariachi & Folklorico Festival, the Baja Blues Fest, the Rosarito Art Fest and the Wine & Lobster Festival in nearby Puerto Nuevo. There are also various bi- and tri-athlons as well as beach volleyball competitions.
Culture
Rosarito has a growing art scene, with more galleries opening each year and an increasing number of open studios run by individual artists or collectives. If film is your passion, you’ll be glad to learn that Baja Film Studios (previously Fox Studios) is in Rosarito… Many films or parts of – have filmed there, such as Titanic, Master and Commander: The Far Side of the World, Pearl Harbor, Deep Blue Sea and most recently, All is Lost with Robert Redford. Here is where you’ll find Baja’s Convention Center – known as The Baja California Center.

Just 15 minutes south of Rosarito you’ll find the charming village of Puerto Nuevo, which boasts 30-plus restaurants, all selling the same thing! Yep, you guessed it, langostas - pan-fried lobsters – or steamed if you prefer. Apart from the lobsters, you’re in for incredible ocean views and the opportunity to shop for Mexican trinkets at the many gift shops.

Rosarito is most well known for its handmade, rustic furniture. Primarily made of carved wood, wrought iron and marble, the pieces are solid and impressive. Many of the furniture stores will custom-make pieces to your specifications. Don’t miss the large, outside mercado, with close to 100 stalls selling mostly Mexican-made handicrafts.

Ensenada is one of the most important ports in Mexico, the second largest cruise port in all of Mexico and the only commercial port in Baja California. It is a vibrant city with many natural and cultural activities to enjoy. There are numerous museums, the beautiful water front and plenty of sporting opportunities. You can play golf, kayak, scuba dive, fish, surf or play tennis at the city’s Tennis Center complex. Close by you can also whale watch, check out the gigantic cactus and boulders in Cataviña or spend an afternoon at La Bufadora (the blowhole). And of course, the famous wine trail is beckoning, with the second oldest winery, Bodegas de Santo Tomas, located right in the city center.

Night Life
You’ll find a vast variety of restaurants and bars on Calle Primera (First Street). The oldest and most popular cantina in Ensenada is Hussongs, at the end of Calle Primera, on Avenida Ruíz; it has been open since 1892 and is still owned and operated by the Hussong family. This is the very birthplace of the Margarita cocktail, created in 1941 by a Hussong bartender for Margarita Henkel, daughter of the German ambassador in Mexico.

La Bufadora (the blowhole) is located on the Punta Banda Peninsula, about 20 miles south of Ensenada. La Bufadora is a marine geyser produced by air trapped in a sea cave due to the ocean waves,
which becomes pressurized and is then released upward in a large, often thunderously loud, spout, sometimes up to 100 feet in height. Spectators are often the recipients of the spout’s spray, which is most welcome on a sunny afternoon. It’s a spectacle of nature you won’t see many other places and a perfect way to spend a morning or afternoon.

Ensenada is home to many museums, among them the State Center for the Arts (CEART), the Municipal Institute of Art and Culture (IMAC) and Esteros Museum. Also of note are the Riviera Cultural Center, Civic Plaza and the historical Former Maritime Customs building, considered one of the very oldest still operating in the state (since 1887).
Nearby Trips: Valle de Guadalupe
Just a few miles out of town you’ll find the beautiful Baja wine trail. A full 90% of Mexico’s wine are produced here in the Valle de Guadalupe region, and there are numerous wineries with tasting rooms for your sampling pleasure. Especially fun is the Fiestas de la Vendimia held in August, which is a two week celebration of the harvest, with wine tastings, gourmet meals, workshops and concerts. The region produces mostly Cabernet Sauvignon, Merlot, Tempranillo, Syrah, Zinfandel, Grenache, Cabernet Franc and Nebbiolo among reds; whites include Chardonnay, Sauvignon Blanc and Viognier.

For a unique shopping experience, don’t miss out on the Black Market, Ensenada’s large seafood market, which has been in operation since the 1950s. Close by is the colorful Craft Center where you can purchase Mexican-made goods. There are also many boutiques and shops along Avenida López Mateos that sell silver, clothing and arts and crafts.

Found on the eastern coast of Baja Sur, Loreto is the gateway to the stunning azure waters of the Sea of Cortés. The Loreto Bay National Marine Park was officially created in 1996 and features the largest marine natural reserve in Mexico with common sightings of flying fish and sea dolphins, sting rays, and sea lions. Step into a time machine and visit the charming village of San Javier, less than an hour drive from Loreto. The Misión San Francisco Javier de ViggéBiaundó is at the center of town and has been since 1758, complete with a cobblestone street leading there. If you’re lucky enough to be in town in early December, the annual celebration of the patron saint features a festival of religious celebrations, carnival rides, games and pageants. Residents grow a variety of fruits and vegetables on their ranches that translate to mouthwatering homemade candies and empanadas that tourists love. The original Baja 1000 race course lies just north of San Javier, so the hills and valleys are a fun adventure for motorcyclists and ATV/buggy enthusiasts.

La Paz is a jewel of a find, a world away from the 9-5 grind, rich with natural beauty and cultural treasures. From romantic beachside getaways to hopping discos and karaoke bars, the fun doesn’t end when the sun sets in La Paz. Nightclubs, discos, restaurants, bars and cafes offer a variety of entertainment.

The Historic District, with its neoclassical architecture, has buildings dating from the beginning of the 20th century. The mission, Misión de Nuestra Señora del Pilar de La Paz Airapí, was built by the Jesuits in the early 1700s. In 1995, many of the islands, mountains, oceans and sea beds around La Paz were inducted into the Global Network of Biosphere Reserves. This area of the Sea of Cortés was declared a UNESCO World Heritage Site in 2005. Of the 40 species of terrestrial mammals, 40% are unique to the islands. Of the 120 species of cacti found in the islands, half are unique to the Gulf of Cortés islands.

La Paz was founded by the Spanish in 1535, but Jesuits built the community. In the town square – the
Zocalo – visit the Cathedral – Misión de Nuestra Señora del Pilar de La Paz Airapí – or learn to play the local bingo game, Loteria. There are galleries and museums like the Museum of Anthropology and the Community Whale Museum, which has completely reconstructed whale skeletons. Teatro de la Ciudad and Teatro Juarez feature permanent and revolving historic and art exhibits, as well as spaces for music, artistic and theatrical presentations

Located only twenty miles from La Paz, Isla Espiritu Santo formed from black lava and volcanic ash but resulted in an amazing transformation. The rugged shoreline and off-shore islands feature spectacular deep, white, sandy bays while the east coast has enormous towering cliffs, unique rock formations and intriguing sea caves. It is a paddling and snorkeling paradise. Visitors can swim with sea lion pups, hike intriguing volcanic arroyos, watch manta rays leap out of the water, follow a school of dolphins, and explore hidden inland lagoons and sea caves. A variety of whales – Orcas, California Gray, fin, sperm and humpbacks, and the amazing blue whale – migrate into the Sea of Cortés in February and March.

On the 4-mile stretch of boardwalk – The Malecon – find handcrafted works by artisans that celebrate local talents and resources from pottery to weaving. abo San Lucas is truly a stunning vacation paradise. Old world Mexican charm describes San José del Cabo, from its historic district with architectural delights to art galleries that celebrate traditional and modern works, to the overwhelming presence of the Parroquia San José church in the town center, there is a natural appreciation of the historic foundation, the stunning coastline, and the desert landscape. The rich and colorful history of San José del Cabo includes pirates, Jesuit missionaries and Indian uprisings. Today however, life moves at a slower pace than in neighboring Cabo San Lucas, known for its upbeat party atmosphere. Beyond the stunning azure waters of the Sea of Cortés and multitude of water sports and adventures, there are also snorkeling, harbor and party cruises, as well as sunset jazz and wine sailing tours.

True thrill seekers can try the Tarzan Swing, a combination pendulum and free-fall ride. Sand buggies and ATV enthusiasts can follow specially designed desert terrain circuits. Nearby, there are also mountain bike and outback adventures – on camel-back.

The Centro Histórico de San José del Cabo is the Historic District. It includes a newly restored plaza, old facades that have been renovated to their original splendor, restaurants that maintain the tradition of colonial courtyards, and galleries – lots of galleries representing both internationally renowned masters as well as young artists who show extraordinary talent and promise.

Far from the glitz and hype of Cabo San Lucas, Cabo Pulmo, once a laid-back fishing village and well-kept secret – is a draw as a magical place of rock formations, towering sand dunes, and miles of deserted beaches. Cabo Pulmo National Marine Park – one of just a handful of such protected areas in all of Mexico – is famous for its coral reef and large schools of fish that inhabit its waters. There are no fancy hotels, T-shirt shops, or tourist places – but the rhythm of the Sea of Cortés is its own music, and the vast night sky, with a view of stars made more prevalent without manmade lights around, is breathtaking. Dive, snorkel, fish, windsurf, hike, mountain bike, bird watch, or surf to your heart’s content.

Touted as one of the most magical places on earth, Todos Santos has a mystical quality about it, with a rich and varied 400year history. This “Pueblo Magico” was once the location for plantations that produced sugar cane and mangos. Eight sugar mills thrived there. It is home to a true Baja Peninsula pop-culture legend – The Hotel California. The indigenous tribe, Guaycura, disappeared in the 18th century, but the influences of medicinal wisdom, creative expression and appreciation for the oasis, sea and mountains that produce the secluded getaway, remained. Todos Santos has a thriving artists’ colony and offers a secluded haven for energizing and inspiring writers, musicians and artists. A treasure trove of art galleries and museums feature the work of local artists, while architectural treasures – including the Nuestra Señora del Pilar de La Paz mission located in the town plaza – add to the creative vision of the area.

There’s the Music Festival, the Gastrovino Festival, the Horse Festival , the Festival del Día de Nuestra Señora del Pilar which celebrates the patron saint and mission namesake. There are also Chili, Strawberry, Baja Reggae, Mango and Shark Festivals.
Culture
An indigenous culture –including the Guaycura and Pericu tribes –inhabited Todos Santos for nearly 1,000 years, but it’s now long gone. Their presence can be witnessed through their rock art, grinders, mortars and arrowheads on a walking tour at the former Camino de las Misiones. This rich history has seen the town grow from missionary-influenced town center, to the sugar-producing mills to the agricultural center and architectural treasure it is today. Historical walking tours take you through time and land you in this inspiring art colony with galleries spotlighting photographs and abstracts, one of a kind furniture and artisan creations. Or take a tour to the mountain oasis to meet local potters who have carved their homes and livings out of the mountains for centuries.

Only eight miles from Todos Santos is the world famous Cerritos Beach Club, which is well-known for exceptional surfing and for having the only swimmable beach on the Pacific for hundreds of miles. Many celebrities such as Rob Lowe, Adam Sandler, Tommy Lee, and Sammy Hagar have
been spotted at the tranquil paradise, but many are drawn to this secluded haven. At Hacienda Cerritos and Cerritos Surf Colony, enjoy great food and drinks on the beach while listening to live music.
Shopping
The plentitude of galleries and shops sell artisan wares and a variety of art from mosaics to abstract watercolors, sculptures to jewelry, stained glass to photography. Wood, tin, leather and pottery are transformed to true works of arts.

Basic health care services are available. The Centro de Salud is the local hospital, but there is also the Red Cross, and holistic health practitioners as an option.

Planning your cabo vacation can be a challenge. There is so much to do and so little time. one thing that ought to be on your short list is stand-up paddle, or suP for short. it is the fastest-growing water sport in the world, and in 2008 cabo suP became the first business to offer the sport in cabo san lucas.
When lee and Meredith Vosburgh moved to cabo as the on-site partners of the bahia Hotel & beach club, they brought their paddleboards with them. They wanted to follow the passion for water sports they had developed during summers in Montauk, new York.
it wasn’t long after they acquired the hotel that cabo suP was born. “There is nothing better than taking a new paddler out on the water for the first time in one of the most beautiful places in the world, and seeing the look on their face when a dolphin or two swims by,” says lee.
cabo suP is the water sports activity center for the nearby boutique bahia Hotel & beach club on Medano beach, cabo’s only swimmable beach. “We offer suP lessons and excursions for our guests.” says lee. all activities are offered in a personal and professional manner with certified and insured instructors.
cabo suP is open daily from 7 a.m. to 5 p.m., and it offers everything from a one-hour introductory lesson to a full-day trip with snorkeling and yoga. in addition, cabo suP offers equipment rentals and a variety of guided tours. With safety a top priority, children younger than eight must be accompanied by an adult.
lee insists that the best part about standup paddling is that anyone can do it. “We recently had three generations in one group enjoying this incredible sport,” he shares. it’s not only a great exercise but also a great way to enjoy nature and socialize with family and friends.

Trend setting – bar Esquina, is located at Medano beach in the heart of cabo san lucas and here is where you will find chef Rogelio Garcia working his magic. The urban setting of the bahia Hotel & beach club and bar Esquina has created a new vibe and option of dining in cabo. The menu features a unique twist on international creative cuisine: Mexican influenced Mediterranean flavors using locally-grown organic produce, fresh fish from the Pacific and sea of cortés, and top-quality meats cooked on a mesquite grill.
“bar Esquina has become known not only for its dining experience but for its hip crowd and mix of locals, tourists and bahia Hotel guests.” bar Esquina offers a varied ambience in accordance with desires of the diners. For those who like socializing, – there is a marble bar where you can hang out at; there’s also a romantic fireplace which imparts a delightful glow on the deck outside, and there’s a chef’s table overlooking a beautiful open kitchen where one may watch the chefs in action. “We like to call it, casual elegance,” said chef Rogelio.
With live music and an energetic crowd bar Esquina delivers a wonderful experience for a romantic occasion or a group setting. The chef names italian, japanese and Mexican foods as his favorites. as for his dream meal, that would be fresh ingredients with lots of flavor – and surrounded by family and friends. He most enjoys working with seafood, spices and vegetables.
born in ciudad altamirano, Guerrero, chef Rogelio began as a waiter in a small family business with his mother and grandmother, later as a cook in classic local cuisine, followed by the culinary institute in acapulco. He worked in different Mexican restaurants then traveled to cuba, the dominican Republic and Venezuela. after six years away he found the opportunity to return to Mexico and begin his new adventure at bar Esquina, where he works with passion, dedication and love for his profession.

Ever since he was sixteen years old, when he began to cook in a friend’s restaurant, chef jorge anaya Morrett has been dedicated to the culinary arts. His restaurant, corazón de alcachofa (artichoke Heart) in cabo san lucas, is committed to serve the best quality possible for the pleasure of its diners. it may also be found in other locations such as Guadalajara, san angel, Polanco and santa Fe, all in Mexico.
“We proudly offer fresh delivered products on a daily basis,” he explains. “We do not have backup stock; when whatever quantity we have to offer for the day is finished –it’s finished, in order to guarantee total satisfaction for our customers.” The cooking style covers classical Mexican, Mediterranean, southern, fusion and molecular, including aged steaks, fresh seafood and homemade pasta.
chef Morett finds it difficult to choose precisely what he considers his signature dish, but says the Grilled artichoke “is to die for!” it is cut into four pieces, presteamed before it is basted with a chimichurri sauce, then finished on the wood grill. as for his personal favorite foods, he thoroughly enjoys real, fresh japanese sushi.
a “dream meal” for him would be one that he could share on a beach, namely a segovian style piglet or an argentinian asado. He also has favorite ingredients with which to work, such as truffles, fresh seafood, homemade pasta, doughs and organic vegetables.
born some 32 years ago in Guadalajara, he studied at uaG university, taking a variety of courses in a number of different countries to expand his cooking expertise. some of the places in Mexico that he particularly enjoys are oaxaca, chiapas, cabo san lucas, Mexico city and, of course, Guadalajara.

Yvan Mucharraz

Executive chef Yvan Mucharraz oversees the culinary operations for the five star capella Pedregal resort in cabo san lucas. The resort includes four restaurants, room service and the banquet department – which provides custom-made menus for weddings, incentive groups and major social events.
The signature restaurant, don Manuel’s, is one of the most popular destination restaurants in los cabos, serving cuisine based on local organic produce grown specifically for the restaurant and prepared using old world techniques in a modern setting.
For the guests whose appetites turn to gifts from the sea, the El Farrallon restaurant offers cliff-side dining, serving fresh seafood caught daily in the sea of cortes and the Pacific ocean. as for his favorite foods, chef Mucharraz enjoys Mexican, although he states he likes “pretty much everything” and enjoys the simple things.
“My cooking style is Mexican, but not traditional,” he says. “i greatly respect my history and culture, knowing that traditions are untouchable. so i like to use Mexican flavors – but cook them in my own way.” Regarding a signature dish, he feels ingredients are “the stars,“ commenting “i don’t like to stay with the same dishes all the time, but use what is fresh and not what is famous.”
born in Mexico, the chef often cooked with his mother and discovered that this would be a good career choice, so attended a culinary school in Mexico city. While studying he worked at la bombilla, where he learned all the basics of Mexican traditions and food, besides running Mexican Festivals in such countries as italy, spain, Peru, austria and Hungary.
chef Mucharraz later continued to practice his expertise in various locations, such as the Riviera Maya, napa, and Paris, before joining capella in cabo as chef de cuisine, where he is presently Executive chef of capella Pedregal.

This proud member of the la Ricazon family of restaurants is also renowned for serving up some of the best sea foods, steaks and salads in los cabos. included in the array of tasty dishes is Eggplant Tojo, a delectable appetizer layered with shrimp, scallops, caramelized onions, sweet mizo and Wasabi aioli. chef Rogelio dominguez, at Hotel boutique Guaycura in Todos santos, is delighted with the opportunity to become the chef at Guaycura and continues to learn every day – ”loving what i do!” he exclaims.
“Throughout the year, we are very lucky that the sea of cortés and the Pacific ocean provide us with fresh fish and fancy seafood,” chef Rogelio explains. “Most of the vegetables and herbs we use are organic and grown locally.” His style of cuisine is classical Mediterranean, southern, Fusion, Molecular, and Mediterranean dishes with a touch of Mexican.
at the moment his signature dish is Pescado en Hoja santa, which is fish wrapped in saint leaf. This is an herbal plant that is used in Mexico. The chef’s favorite foods include Hare stew with hand-made flour tortillas, or deer Machaca – shredded beef-style; both of which are local dishes.
as for his dream meal, he would like to try ancient dishes from Mexican ancestral cultures, such as the aztecs, so that he might be able to integrate them later on into his own dishes. among the ingredients he most likes to use are Mexican herbs and spices, such as Hoja santa. He says generally he most enjoys preparing fish and seafood.
born in Todos santos thirty years ago, he began to cook when he was eight, when he made Fish Machaca, which was a family favorite. He learned with his father who, although a fisherman, was a great cook and highly passionate about it. after further excellent instruction from a swiss chef, he continued his career at the Hotel california until he joined Guayacura, an elegant boutique, spa and restaurant some 40 minutes from cabo san lucas.

This signature restaurant at the Hacienda beach club and Residences at Medano beach merges traditional Mexican architecture with casual beachfront dining for an elegant, relaxing experience. chef Hernandez has trained with notable chefs in spain, France and Mexico city. Visiting various regions of Mexico including oaxaca, Puebla, Guerrero and Veracruz, he studied the unique flavor profiles and recipe variations from the coastal and interior regions of Mexico.
The menu at Hacienda cocina y cantina showcases the different regions and flavors of Mexico through expertly crafted authentic dishes, using the finest local ingredients. signature entrees include arrechera (marinated grilled skirt steak), Fideo seco (traditional Mexican pasta, fresh cheese, cream and avocado), carnitas (slow roasted pork) and Pollo con Mole de Puebla (chicken breast, dark mole, white rice and plantains). The mouthwatering desserts include churros de la casa (Mexican street doughnuts with chocolate and caramel sauces), Pastel de 4 leches (four-milk cakes) and Flan de cajeta (traditional Mexican custard).
The kitchen was the heart of his home in acapulco, where chef Hernandez spent his childhood. spending time with his mother and grandmother, he learned to make tamales, pozole and sopes, prepared using traditional methods. Every day after school he ate Fideo seco, which is considered Mexican “comfort food” and now appears on the menu at Hacienda cocina y cantina, reflecting his pride in traditional home-style Mexican cuisine. in sharing each dish with his guests, he hopes it will tell the story about its origin and impart a deeper connection with his homeland of Mexico.

Executive chef angel carbajal, co-owner of nicksan in cabo san lucas, Palmilla and Mexico city, has a reputation for demanding perfection and precision in the kitchen. He is a consummate chef when it comes to minding the details and yet, in spite of meticulousness, chef carbajal believes in allowing space for innovation.
“creative, innovative and, at the same time, keeping it simple!” is the maxim by which he lives. some of his laser-like focus may stem from studying industrial Mechanics engineering in college. although, at that time, he never dreamed he would find a career in cooking, when he moved to baja he discovered inspiration and solace in the ocean. and so, today, he still looks to the ocean for his source of inspiration in the kitchen and in his life.
nicksan is a trio of chef-owned restaurants that offers unique japanese-style cuisine combined with occidental touches that tantalize the most demanding of palates. it is here that chef carbajal is known for his creative fusion of dueling cuisines and complementary flavors, such as sushi with a Mexican note, for example.
This dueling concept of cuisines essentially ends up being a symbiotic relationship of balancing flavors. by insisting on freshness from the sea and adding creative Mexican touches such as habanero chile, onion and cilantro, chef carbajal – along with his co-owner chef Masayuki niikura – serves up flavors of a japanese/ Mexican marriage that reveals the best in each.
Ever looking toward the future, chef cabajal’s new concept is a restaurant for women where everything is healthy, light, and nutritious, with proper portions for weight maintenance. “We’ll work with organic products and carbons, grilling, steaming and moving away from fried foods,” he predicts.

bringing the flavors of traditional southern italian cuisine to Pan di bacco Restaurant comes chef salvatore Meesina, whose cooking style is essentially Mediterranean. (Pan di bacco means bread of bachus.) located in the center of cabo san lucas, the italian bakery Pizzeria brings a new concept to the scene –“The art of italian baking” in a hip, modern setting.
“We are very careful to use organic foods, respect the environment with recyclable products, and use original recipes from the italian culture,” chef salvatore explains. “i pay special attention to original flavors and follow the traditional method of preparation.”
The chef’s signature dish is all about “Pasta Fresca.” He enjoys making his own fresh pasta, because it is the perfect base to work with the different flavors, also it is flexible for serving in various ways. Vegetables are his favorites, because each one has its own unique type that can change in flavor and present infinite ways to prepare.
chef salvatore finds it hard to decide what constitutes his “dream meal,” because he really enjoys every kind of meal and each different flavor but, probably, would choose the linguini Frutti di Mare. This is a first course, where the linguini complements the mix of crustaceans – squid and clams, with fresh grape tomatoes and a touch of garlic. His favorites to work with are vegetables such as tomatoes, peppers, potatoes or eggplant, because each offers infinite ways to be cooked and served, having different types of flavors.
although his family came from sicily, he was born and raised in Milan, italy. as a child he played with food in the kitchen, which influenced his style of cooking. Graduating from the prestigious school of italian cuisine, alMa, he worked around restaurants in Europe, where he learned different types of food preparation. However, chef salvatore is passionate about diving and snorkeling, so loves Mexico’s coast, which he considers the most beautiful and rich in the world.

The owner of Mexico‘s oldest French restaurant, jean loup bitterlin, is the son of the founder, Virginia Geffroy de bitterlin, nicknamed Pepita, whom chef luis carlos regards as an icon in fine gastronomy.

in addition to serving French fare, the extensive and distinctive menu includes traditional Mexican and seafood dishes. Pastries are also a speciality, plus an extensive wine cellar of the best regional wines. Rather than naming a signature dish, he says he likes to serve food that is “beautiful to the eye, delicious to the palate and great for the digestion.” besides French cuisine that includes fines herbs, the chef likes spicy dishes such as Greek, oriental and, of course, Mexican. as for his “dream dish,” chef luis carlos says it would be one that all nationalities, religions and countries would enjoy together.
born in Hermosillo, sonora, he attended university there and, over a period of twenty years, has had the opportunity to work in Five-star resorts, as well as learn from great teachers including, he says, Mrs. Pepita –whom he didn’t have the honor of meeting – but has been able to learn from the cooking legacy she left behind. His mother is also an excellent example of being a great cook, with the necessary love that makes life enjoyable.

chef Paolo della corte came to sunset da Mona lisa, a sea Food and italian Restaurant in los cabos, as a consultant and fell in love with it. a landmark located at the tip of the bay of cabo san lucas, the restaurant offers breathtaking views of the ocean and the arch, where its magical atmosphere inspires him to create beautiful dishes.
“Fresh seafood and homemade pasta are two of the trademarks of sunset da Mona lisa,” explains chef Paolo. His signature dishes include raviolis with luciana octopus served with a puttanesca sauce, fagottini with smoked mozzarella, prawns and porcini mushrooms served with fresh cherry tomatoes and basil, and ravioli fried rice with chopped raw fish and lime, served with potato sauce and caviar. one of the specialties is the lava Rock selections, where you grill your food on a super hot lava rock at your table.
“We will gladly accommodate any specific dietary needs, specializing in vegetarian, celiac, gluten-free or dairy-free dinners,” he says. although the chef likes food of all types, he is always faithful to the traditional italian style.
“My culinary creations are born from experience with traditional italian ingredients, through simple yet sophisticated preparations to amaze people with a great dish full of different flavors,” he states.
born in naples and raised in Villa literno, italy, chef Paolo attended cooking school in castel Volturo while gaining culinary experience in local restaurants. after graduation he continued the journey into enriching his gastronomic knowledge with great masters of italian cuisine; such as, Heston blumenthal (3-star), joël Robuchon (3-star), Pino lavarra (2-star), Valentino Marcantilii (2-star), Gennaro Esposito (2-star) all chefs who are Michelin stars.
